Bruja Sana Kombucha

Our story

A living drink born of the Mayan jungle

We make kombucha the way it's been made for centuries: with patience, with living culture, and with hands that know the craft.

What is it?

Tea that comes alive as it ferments

Bruja Sana Kombucha is a tea-based fermented drink. Its fermentation happens thanks to a living culture of beneficial bacteria and yeast. The result is a perfect sweet-and-sour balance, with a touch of acidity, bubbly and unforgettable in texture.

We craft every batch from an ancient tea recipe long reputed for its medicinal qualities. Fermentation transforms the tea into an effervescent, refreshing drink, rich in millions of probiotics, vitamins, and organic acids.

The SCOBY, the mother of kombucha

The mother

Meet the SCOBY

Some call it the kombucha mushroom, others the Mother, and others know it as the SCOBY, short for Symbiotic Colony Of Bacteria and Yeast — a symbiotic colony of bacteria and yeast.

It's a concentration of cellulose where living bacteria and yeast coexist, feeding on the tea and sugar. From that process comes a drink rich in probiotics and vitamins. That's why we say kombucha is alive: it isn't a formula, it's a culture that breathes.

Where it comes from

Made between Valladolid and Tulum

All of our kombucha is crafted on the Yucatán Peninsula, the artisanal way and with traditional methods. Our production lives between Valladolid and Tulum, in the heart of the Mayan jungle.

We employ local labor, including the Mayan community. We believe a living drink is also born of a living community — and that flavor tastes better when it's made with fairness and with roots.

What drives us

Three things we won't compromise on

Alive

No over-pasteurizing or over-filtering. The culture stays active in every bottle.

Artisanal

Small batches, fermented by hand and in their own time. No industrial shortcuts.

Local

Work and talent from the peninsula, including the Mayan community alongside us.

What is Kombucha?

Fermented tea — living and bubbly

Bruja Sana Kombucha is a tea-based fermented drink, made alive by a living culture of beneficial bacteria and yeast (the SCOBY). The result is a perfect sweet-and-sour balance, lightly tart and naturally effervescent.

It's made with unrefined cane sugar, organic tea, and a bacteria-and-yeast culture, then rested for as long as it takes for fermentation to work its magic.

The Legend

The healing witch's brew

Kombucha has existed for centuries — perhaps millennia. Legend has woven its origin through imperial courts, healers, and caravans that crossed the world:

  • China, ~220 BC — brewed for Emperor Qinshi Huangdi by a “witch of health.”
  • Egypt — a healer-witch in the era of Pharaoh Khufu.
  • Japan, 414 AD — “Doctor Kombu” brings it before the emperor.
  • The Silk Road — a tribal witch carries it alongside Genghis Khan's armies.
  • Russia and Ukraine — recorded in the late 19th century.

Legend says the witch is still alive, spreading the benefits of her brew from the south of Mexico.

And to be clear: by “witch” we mean a person who heals, connected to mother earth — not a Halloween witch.

Team & community

Handmade, in community

Every batch is crafted by hand on the Yucatán Peninsula, by local hands and the Mayan community. We tend the culture, the herb harvest, and every step of production — because a living drink is also born of a living community.
